How to Crack an Egg + Yummy Brownie Recipe

You just got a call –  company is coming in half an hour. You want the amazing smell of your almost world-famous chocolate brownies to welcome your guests as they approach the front door. You have just a few minutes to collect the ingredients, mix them, and get the batter into the prepared pan in the preheated oven. Easy, right? If you crack your eggs correctly, yes. If not, disaster looms.

Don’t Let This Happen To You

This is my story: I assembled every ingredient into the bowl except the eggs. This particular recipe is very rich, and we love it. I was adding six eggs to the mix. Eggs one through five were perfect. Egg number six was not. Being in a hurry, I skipped the very important step of cracking each egg individually into a small bowl or cup to make sure it was ok before adding it to the other ingredients. Sadly, egg number six was not something I would want to feed myself, my family, or my dog. I had just ruined the last of some of the ingredients, so I couldn’t start again either. My brownie batter became a pile of trash.

Take the time to crack each egg into a small cup or bowl by itself before adding to your recipe. It allows you to see if there is anything off-putting in the egg before it contaminates your batch of the day. There are times when we see something in an egg that is safe to consume but just looks unappetizing. I don’t want that in my brownies or omelets, so this small step can save a lot of ingredients from ending up in a trash heap or compost pile.

Most of the time, there is more than one way to do something, but this is a time to follow a procedure. It isn’t really about how you crack the egg open but about where the egg goes after you crack it. Unless you’re using a single egg without any other ingredients, always crack your eggs into a small bowl or cup first. This may save you from ruining your recipe, whatever it may be.

…and of course, you want the recipe for the brownies, right?

Yummy Gooey Cocoa Brownies

  • 10 tablespoons softened butter
  • 2 cups sugar
  • 6 eggs
  • 2 teaspoons vanilla extract
  • ¾ cup flour – rounded
  • ¾ cup cocoa – rounded
  • ¾ teaspoon salt
  • ¾ cup chocolate chips
  • ½ cup nuts (optional)

Preheat the oven to 350 degrees F. Lightly spray a 9 x 13” baking pan with cooking oil and set aside.

Add the ingredients to a mixing bowl, with the exception of the eggs, chocolate chips, and nuts. After a quick look at each egg, add it to the mixing bowl. When all the eggs have been added, mix the ingredients until nicely blended. Now, mix in the chocolate chips and nuts. Pour into the prepared pan. If you still have a handful of chips or nuts, you can sprinkle a bit on top.

Bake for 30-35 minutes to your desired doneness. Try to resist them as they cool for a bit. Cut and serve.
